　　DIGESTION AND NUTRITION

　　Surrounded by snow and ice, an Aleut hunter slices slabs of raw whale blubber for dinner．In a village in Nepal, a grandmother eats only a bowl of rice．Ten thousand miles away, an American college student downs a bacon cheeseburger, a salad and coffee, Hot chilis, salted fish and cassava tubers．

　　Through it all, our digestive systems receive whatever we choose to swallow and convert that array of foods into carbohydrates, lipids and proteins the body can use for energy and to build, repair and maintain its role in homeostasis, and thus in survival．The system plays a key consists basically of a food-processing tube and some accessory organs．

　　Many Americans have poor eating habits．They may eat large quantities of snack foods, skip meals, or eat too much and often too fast．Worse yet, the typical American diet tends to be high in fat, cholesterol and salt．The world distribution of some illnesses suggests that the body may pay a high price for certain dietary habits．For example, in the United States a fatladen diet is a mayor contributor to health-threatening obesity and heart disease．Obesity also increases an adult's risk of developing diabetes and contributes to other health problems． In regions where salt-cured and smoke-cured foods are staples, the rates of stomach and esophagus cancer are disturbingly high．Nongenetic colon cancer is much more prevalent among people whose diets lack sufficient fiber, as is common in the United States．Most people of rural Africa and India cannot afford to eat much more than whole grains, which are high in fiber content, and they rarely suffer colon cancer.

　　听有这一切，都经我们的消化系统，把我们吞下的食物，转变成为糖类、脂类和蛋白质，用以为我们提供能量，修补并且维持体内的组织。消化系统的组成包括消化管和附属的消化腺。

　　一些外国人有十分不好的饮食习惯，他们吃大量的快餐食品，典型的美国人的食物趋向于高脂肪、高胆固醇、高盐。全世界的疾病调查表明，人体正在为此付出高昂的代价。举例来说：在外国，富含脂类的饮食会导致肥胖和心脏病。而高盐的饮食和熏制的食物会导致胃和食道癌的发病率提高。在饮食中缺乏丰富纤维素的地区，结肠癌的发病率就相对普遍，而在乡下的黑人和印第安人中，由于他们的饮食中有丰富的谷物和高的纤维素，他们就很少患结肠癌。
